I want begin work with Eleanor CMS but I need Make a Block ate Left side of website that contain Cascading Menu category (e.g Film, Music, Game, ....) and Each contain sub menu When you click on it. how can make it?

Open administrator panel and visit Modules => Menu. There you can create you own menu wish structure you want. Please, do that and I'll tell you what to do after.

I try and make a menu with Custom Name (Software), But when I create a new Item and add it to sub software menu, don't show it (Sub Menu).

I use Version 1.0.

behdadsoft, it is non official verison. Try to install this one http://eleanor-cms.ru/uploads/system/eleanor_cms_0.9_utf8.7z and try create your menu on it.
